This veggie lo mein is a quick, affordable, and satisfying meal that blends pasta with crisp vegetables and a flavorful, slightly spicy-sweet sauce. I used whole grain spaghetti instead of traditional lo mein noodles for convenience and added nutrition.

🥢 Budget-Friendly Veggie Lo Mein (with Whole Grain Spaghetti)



🥬 Ingredients:

  • Whole grain spaghetti – 200g

  • Mixed vegetables (e.g., bell peppers, carrots, cabbage, broccoli) – 2 cups, thinly sliced

  • Garlic – 2 cloves, minced

  • Ginger – 1 tsp, grated

  • Soy sauce – 3 tbsp

  • Sesame oil – 1 tbsp

  • Chili sauce or sriracha – 1 tsp (adjust to taste)

  • Brown sugar or honey – 1 tsp

  • Green onions – for garnish

  • Toasted sesame seeds (optional)

🍳 Instructions:

  1. Cook the whole grain spaghetti according to package directions. Drain and set aside.

  2. In a large pan or wok, heat sesame oil over medium heat. Add garlic and ginger; sauté until fragrant.

  3. Add the mixed vegetables and stir-fry for 3–4 minutes until just tender.

  4. In a bowl, mix soy sauce, chili sauce, and sugar/honey. Pour into the pan and stir well.

  5. Toss in the cooked spaghetti and mix everything together to coat evenly.

  6. Garnish with chopped green onions and sesame seeds. Serve hot!
