For the Pork Filling:

For the Dipping Sauce:

  • Soy sauce – 2 tbsp

  • Rice vinegar or lemon juice – 1 tbsp

  • Chilli flakes – ½ tsp

  • Sesame seeds – optional

  • Finely chopped green chilli – 1 (optional)

1. Prepare the Dough:

  • Mix flour and salt. Gradually add water and knead into a smooth, firm dough.

  • Cover and rest for 30 minutes.

2. Make the Filling:

  • In a bowl, combine minced pork, garlic, ginger, spring onion, soy sauce, sesame oil, pepper, and salt.

  • Add cabbage if using. Mix thoroughly and refrigerate while rolling wrappers.

3. Roll the Wrappers:

  • Divide the dough into small balls and roll them into thin circles (about 3–4 inches in diameter).

  • Keep them covered with a damp cloth to avoid drying out.

4. Filling the Dumplings:

  • Place 1 spoon of filling in the center of each wrapper.

  • Wet the edges with water, fold in half, and pleat the edges to seal.

5. Cooking Options:

Steaming:
Place dumplings in a steamer lined with parchment or cabbage leaves. Steam for 12–15 minutes until pork is cooked.

Pan-Frying (Potstickers):
Heat oil in a pan. Arrange dumplings flat side down, cook until the bottom is golden. Add a little water, cover, and let steam for 5–7 minutes.

Boiling:
Gently drop dumplings into boiling water. Cook until they float and look translucent (about 5–6 minutes).
