🧾 Ingredients

🌽 Main Ingredients:

  • Sweet corn kernels – 1 cup (fresh, frozen, or canned)

  • Water or vegetable/chicken stock – 3 cups

  • Corn flour (cornstarch) – 1½ tbsp

  • Egg – 1 (lightly beaten)

  • Ginger – 1 tsp (finely chopped)

  • Garlic – 1 tsp (finely chopped)

  • Spring onions – 2 tbsp (chopped, white and green parts separated)

  • Salt – to taste

  • White pepper or black pepper – ½ tsp

  • Soy sauce – 1 tsp (optional)

  • Sugar – ½ tsp (optional, for sweetness)

1. Blend the Corn

  • Take half of the corn kernels and blend them with a little water into a coarse paste.

  • Keep the remaining half whole for texture.

2. Prepare the Base

  • Heat 1 tsp oil in a pan.

  • Add chopped ginger, garlic, and the white part of spring onions.

  • Sauté for a few seconds until fragrant.

3. Add the Corn

  • Add both the blended and whole corn to the pan.

  • Pour in the water or stock.

  • Add salt and pepper.

  • Bring to a gentle boil and simmer for 5 minutes.

4. Thicken the Soup

  • Mix corn flour with 2 tbsp water to make a smooth slurry.

  • Slowly pour the slurry into the boiling soup, stirring continuously.

  • The soup will start to thicken. Cook for 2–3 more minutes.

5. Add the Egg (Optional for Non-Veg Version)

  • Slowly drizzle the beaten egg into the soup while stirring in one direction.

  • This will form soft egg ribbons.

6. Finish and Serve

  • Add soy sauce (optional) and a pinch of sugar for balance.

  • Garnish with chopped spring onion greens.

  • Serve hot!
